There is a first time for everything!

This is my first post! I've been reading quiet a few food blogs in the past couple weeks and decided to start my own. I love cooking and baking and my husband loves to eat! I've found so many good recipes online and I figured this would be a good way to keep everything organized

I made two different meals last night. One was dinner, which I'll include in this post. The other was my mom's delishous Crock Pot Beans which were made to freeze and provide dinners for the hubby.

I hope you enjoy my blog!

Stuffed Peppers

I've seen this recipe floating around but I never wrote it down. I ended up adding some other ingredients.

1 lb. ground beef

1/2 c. white rice

1 can diced tomatoes (I used the tomatoes that had some chilies added)

1/4 c/ ketchup

1/2 tsp. chili powder

1/2 tsp dried onions (You could add fresh)

3 green peppers

1 c. shredded Jack cheese

Brown beef, drain.

Meanwhile, cut the tops off the peppers and scoop out the inside and seeds.

Add the rice, tomatoes, ketchup, chili powder and onions to the beef and let simmer.

Boil 4 cups water with salt. Add the peppers (I did it one at a time so I could watch them better) and let boil for 3-5 minutes or until soft.

Remove the peppers and dry on paper towels.

Place the peppers, standing up, in a baking dish. Put a pinch of cheese at the bottom of each pepper. Fill with beef mixture and top with more cheese.

Bake in a oven at 350 degrees for 15 minutes.

The cheese should be melted and browned on top.

I didn't get a picture after I plated them. We hadn't eaten much yesterday so we let them sit on the plate long! We had salad and a crusty bread but I'm sure you could add anything!
Enjoy!
